GERMAN BAKED FRUIT FLAN
3/4 cup softened butter1/2 cup sugar1–1/2 cups all-purpose flour1 package vanilla or white chips, melted and cooled1/4 cup heavy whipping cream1 package softened cream cheese1/2 cup pineapple juice1/4 cup sugar1 tablespoon cornstarch1/2 teaspoon lemon juice1 pint sliced fresh strawberries1 cup fresh blueberries1 cup fresh raspberries
Cream butter and sugar until light and fluffy in a large bowl. Beat in flour (mixture will be crumbly).
Pat onto a greased 12-in. pizza pan and bake at 300° for 25–28 minutes or until lightly browned. Leave it to cool.
In another bowl, beat melted chips and cream until smooth. Add in the cream cheese and continue to beat it until smooth. Spread over the crust. Chill for 30 minutes.
For the glaze, combine the pineapple juice, sugar, cornstarch, and lemon juice in a small pan. Bring to a boil over medium heat and stir for 2 minutes or until thickened. Cool.
