Beef Medallions with a Blue Stilton Sauce

Ingredients
4 pieces | Certified Angus Beef® filet (approx. 4.5 oz. per slice) |
4 Tbsp. | Market District® olive oil |
Sauce | |
1 oz. | butter |
1 oz. | flour |
1 cup | milk |
3 oz. | Long Clawson Blue Stilton, crumbled |
Salt and pepper to tasteDirections
Melt the butter in a saucepan, remove from heat and stir in flour; return to heat and cook for 1–2 minutes. Remove pan again and gradually stir in milk. Return to heat and bring to a boil, stirring constantly to prevent sauce from becoming lumpy. Simmer 3–4 minutes. Add crumbled Blue Stilton, stirring constantly, until cheese has melted. Simmer another 5 minutes. Add salt and pepper. Heat olive oil in a frying or griddle pan and add steaks. Cook steaks for 4–5 minutes each side for medium doneness. Spoon sauce over steak and serve.
